The honest answer is that where you fill up beats when you fill up, almost every time. But there are a few patterns worth knowing, and one province where the question has a precise answer.
The station beats the hour
Two stations a few blocks apart routinely differ by 10 to 15 cents a litre. The same station rarely moves that much in a single day.
On a 50-litre fill-up, the local gap is $5 to $8 every time. Waiting until evening at the dearer station does not come close to that.
Midweek is a weak pattern, not a rule
Prices in many Canadian markets tend to firm up before long weekends and summer travel periods, and retailers often reprice on Wednesday or Thursday. It is a tendency, not a schedule, and it varies between cities.
Treat it as a tiebreaker: if you can fill up Tuesday instead of Friday before a long weekend, do. Do not drive across town for it.
In Québec, you can simply look it up
Since 1 April 2026 every retailer in Québec has had to report its price to the Régie de l'énergie. That makes Québec the only province where the price you see before leaving is the declared price of that specific station.
